I have been running on very little sleep lately. I know that it’s just a phase, thankfully, but my youngest is taking teething very hard. I’ll look back on these days fondly, right? Here’s hoping anyway. So here’s what’s on our menu for this week.
Sunday: Grilled salmon, roasted asparagus, and orzo pasta with parmesan and feta cheese. (This is one of Batman’s favorite meals, and he inhaled it. Completely cleaned his plate. My boy has expensive taste!!)
Monday: Grilled cheese and tomato soup.
Tuesday: Celebrating Mardi Gras with pancakes and sausage.
Wednesday: Shrimp and Grits
Thursday: Steak fajitas, with homemade tortillas. Homemade tortillas make all of the difference in the world. They actually taste like something rather than just a delivery vehicle for the contents. I highly recommend you trying them. My recipe is contained in Christy Jordan’s new cookbook.
Friday: Crock pot tortellini soup. *This is my new recipe of the week. I’ve tried a crock pot tortellini before and I wasn’t a huge fan, I’m going to try this one instead, it seems to have ingredients that are more to my liking. If you try it, let me know!
Saturday Lunch: Birthday party!
